This recipe for Strawberry Brownies creates a rich and moist, fudge-like dessert great for any occasion, especially spring and summer parties and holidays. It's quick and easy - made with a box of strawberry cake mix to that gives them a strong strawberry flavor, an easy icing glaze and crushed freeze-dried strawberry just like when we make our oh-so-tasty strawberry crunch cupcakes.

We love fruity and sweet strawberry recipes, especially once the weather gets warmer. Make-ahead strawberry oatmeal, a strawberry banana smoothie, strawberry lemon bread and strawberry Nutella crescent rolls are some of our favorites. And strawberry toast makes a great breakfast when fresh strawberries are in season.

Strawberry brownies are great for birthday parties and Mother's Day or Easter brunches too, along with spring-themed waffle pops, Oreo brownies and a s'mores pie.

  • While strawberry brownies are made with cake mix, they taste just like fudge brownies and not like cake.

Ingredients & Equipment

Brownies

  • 1 (15.25 ounce) strawberry cake mix
  • ½ cup white chocolate chips
  • ¾ cup butter

Topping

  • 1 cup powdered sugar
  • 2 tablespoons whole milk
  • ¼ cup crushed freeze dried strawberries, crushed

Equipment Needed:

  • Saucepan
  • Spoon
  • Bowl
  • 8 inch by 8 inch baking dish
  • Parchment paper

Tips from the Chef

When done, the brownies will be firmer on the edges than in center. Don't continue cooking until the center is firm, or the fudge-like consistency will disappear.

How To Make Strawberry Brownies

  1. Preheat your oven to 350℉Fahrenheit and line a baking dish with parchment paper.
  2. Melt the white chocolate chips and butter in a small saucepan on low heat, stir constantly.
  3. Once the white chocolate mixture is melted, pour the cake mix and then the chocolate mixture into a mixing bowl and stir until well combined. It may feel a little like play-doh at this point, which is fine.
  4. Transfer the batter to your lined baking dish, smooth out, and bake for about 25-30 minutes in the preheated oven, or until it starts to golden slightly on the edges. Remove from the oven.
  5. While the strawberry brownies cool, make the icing by stirring together the powdered sugar and milk. Pour the icing on top of the brownies and then sprinkle crushed freeze dried strawberries on top. Cut and enjoy!
