Egg and Cheese Burritos are one of my family's favorite easy breakfast recipes. They are quick enough to make on a school or work morning but warm and hearty enough for a satisfying weekend breakfast.

Flour tortillas are stuffed with warm scrambled eggs and a good amount of melted cheese. Add a variety of fillings like bacon and sausage or a healthy dose of vegetables if you'd like, and you've got a delicious breakfast burrito!

We love easy, cheesy recipes and this is one is at the top of our list, along with cheesy quesadillas and 5-minute tortilla pizzas.

Below you'll find lots of different add-in suggestions, plus ways to alter this easy recipe for different dietary needs. No matter how you choose to customize your egg and cheese burrito, I guarantee you'll love it!

Ingredients Needed

All you need to make egg and cheese burritos is:

  • large eggs
  • shredded cheddar cheese
  • 10-inch flour tortilla wraps

Variations

  • Change the cheese: Mexican, Colby Jack, Monterey Jack, Swiss, and white cheddar cheese are great options.
  • Add meat: crispy bacon, pork roll, and ground breakfast sausage taste wonderful in an egg and cheese burrito.
  • Add vegetables: fresh spinach, diced tomatoes, avocado, diced peppers, and sliced red onions make great additions.
  • Add salsa or sauce: classic tomato salsa, guacamole, hot sauce, and mango habanero salsa are all delicious on a breakfast burrito.
  • Mix-in other proteins: black beans and chickpeas make an even more protein loaded burrito.

Adaptations for Specialty Diets

Low Carb: decrease the carbs in your egg and cheese burritos by using low carb tortilla wraps.

Gluten-Free: use corn tortillas or gluten-free flour tortillas.

Vegan: opt for vegan eggs and vegan cheddar cheese, plus make sure the tortillas are labeled vegan (most are).

Dairy-Free: because eggs are not dairy, simply use dairy-free cheddar cheese.

Cooking Tips

  • I use large flour tortillas to make a hearty breakfast burrito that's satisfying enough for one adult. Small or medium tortillas work for smaller appetites or as a finger food for a brunch gathering.
  • Always grease the skillet with butter or cooking oil so that the eggs don't stick. I move them around the pan with a wooden spoon frequently as they cook to avoid browned eggs.
  • Eggs cook quickly so be careful not to overcook them. Just a few seconds too long will result in dried-out scrambled eggs.
  • I love my scrambled eggs sprinkled with freshly ground black pepper and salt. Use as much or as little to suit your preference, or none at all.

How To Make Breakfast Burritos

  1. Crack the eggs into a large bowl and discard the shells. Whisk until the yolks and whites are combined. Sprinkle with salt and black pepper if desired.
  2. Heat a medium-sized skillet over medium-high heat. Spray with cooking oil or melt a small amount of butter to coat the bottom of the pan. Add the egg mixture and cook for 2 minutes, stirring frequently with a wooden spoon. Break into small pieces with the spoon as they cook. Remove from the heat.
  3. Warm the tortillas in the microwave for 10 seconds. Add half of the eggs and cheddar cheese to the center of each tortilla. Roll into burritos tucking in the ends as you go.
  4. Serve as is or with salsa or ketchup for dipping and a side of your favorite fruit!

Can You Freeze Egg and Cheese Burritos?

Yes, these burritos freeze very well! Wrap the stuffed burrito in foil, then plastic wrap or put into a plastic freezer bag. Freeze for up to 3 months for optimal quality. Reheat in the toaster or microwave. They can be thawed overnight prior to reheating or reheated from frozen.

Are Egg and Cheese Burritos Healthy?

How healthy this recipe is is subjective, and depends on your definition of healthy. One large breakfast burrito made with 2-3 scrambled eggs and ¼ cup of cheddar cheese is less than 400 calories. It contains about 23 grams of protein, but is on the higher side in cholesterol and fat.
