  • Crack the eggs into a large bowl and discard the shells. Whisk until the yolks and whites are combined. Sprinkle with salt and black pepper if desired.
  • Heat a medium-sized skillet over medium-high heat. Spray with cooking oil or melt a small amount of butter to coat the bottom of the pan. Add the egg mixture and cook for 2 minutes, stirring frequently with a wooden spoon. Break into small pieces with the spoon as they cook. Remove from the heat
  • Warm the tortillas in the microwave for 10 seconds. Add half of the eggs and cheddar cheese to the center of each tortilla. Roll into burritos tucking in the ends as you go.

Notes

Store breakfast burritos wrapped in foil in the fridge for up to 2 days. Reheat in the microwave (with the foil removed) or the toaster.
To freeze, wrap the stuffed burrito in foil, then plastic wrap or put into a plastic freezer bag. Freeze for up to 3 months for optimal quality. Reheat in the toaster or microwave. They can be thawed overnight prior to reheating or reheated from frozen.
