To make a single serving peanut butter cookie you need:
- 2 tablespoons softened unsalted butter
- 2 tablespoons creamy peanut butter
- 3 tablespoons white sugar
- ½ teaspoon vanilla extract
- ⅓ cup all-purpose flour
- ¼ teaspoon baking soda
- a pinch of sea salt

How To Make One Peanut Butter Cookie
- Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the peanut butter, softened butter, white sugar and vanilla extract with a hand mixer until smooth.
- Stir in the all-purpose flour, baking soda and pinch of sea salt.
- Roll the dough into a ball and place on the prepared baking sheet. Gently press down with a fork to make imprints on the top, if desired.
- Bake for 15-17 minutes, or until the edges just begin to turn golden brown and the center is no longer wet.
- Remove from the oven and transfer to a cooling rack to finish setting before enjoying. Add an extra pinch of sea salt on top if desired.

Do not underbake. The center will continue to cook for a few minutes after being removed from the oven - but if taken out too early the center will not fully set.
