Ingredients

To make a single serving peanut butter cookie you need:

  • 2 tablespoons softened unsalted butter
  • 2 tablespoons creamy peanut butter
  • 3 tablespoons white sugar
  • ½ teaspoon vanilla extract
  • ⅓ cup all-purpose flour
  • ¼ teaspoon baking soda
  • a pinch of sea salt

How To Make One Peanut Butter Cookie

  1. Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the peanut butter, softened butter, white sugar and vanilla extract with a hand mixer until smooth.
  3. Stir in the all-purpose flour, baking soda and pinch of sea salt.
  4. Roll the dough into a ball and place on the prepared baking sheet. Gently press down with a fork to make imprints on the top, if desired.
  5. Bake for 15-17 minutes, or until the edges just begin to turn golden brown and the center is no longer wet.
  6. Remove from the oven and transfer to a cooling rack to finish setting before enjoying. Add an extra pinch of sea salt on top if desired.

Tips from the Chef

Do not underbake. The center will continue to cook for a few minutes after being removed from the oven - but if taken out too early the center will not fully set.

How To Store

Store in an airtight container at room temperature for up to 5 days. It can be frozen for up to 6 months.

Can I Make More Than One Cookie?

Absolutely! If you would like to divide the dough in half and make 2 cookies instead, bake for about 12 minutes instead of 15 minutes.
