Craving something sweet but don't want to bake a full batch? This Single Serve Peanut Butter Cookie is perfectly portioned for one. With just a handful of pantry staples and 5 minutes of prep, you can enjoy a warm, bakery-style cookie without the temptation of leftovers all week.
Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
In a mixing bowl, cream together the peanut butter, softened butter, white sugar and vanilla extract with a hand mixer until smooth.
Stir in the all-purpose flour, baking soda and pinch of sea salt.
Roll the dough into a ball and place on the prepared baking sheet. Gently press down with a fork to make imprints on the top, if desired.
Bake for 15-17 minutes, or until the edges just begin to turn golden brown and the center is no longer wet.
Remove from the oven and transfer to a cooling rack to finish setting before enjoying. Add an extra pinch of sea salt on top if desired.

Storing: Store in an airtight container for up to 5 days at room temperature or freeze for up to 6 months.Tip 1: Do not underbake, otherwise the center will not set fully. Remove from the oven when the edges just begin to turn brown.Tip 2: Make 2 cookies by diving the dough in half and baking for 12-14 minutes instead of 15-17.
