This tasty Italian meal is made with a sour cream, mozzarella, and Parmesan cheese filling. This creamy filling is spread onto cooked lasagna noodles along with a quick homemade tomato sauce (or slow cooked spaghetti sauce) and ground beef mixture. The noodles are rolled and topped with extra sauce and mozzarella, then baked until perfectly cooked.
The fun shape of the lasagna roll ups as opposed to a traditional casserole is a change for kids, which always makes eating more fun. They can even eat these with their hands! What Are Lasagna Roll Ups?
Lasagna roll ups are a perfectly portioned version of a big lasagna casserole. Rather than layering lasagna sheets with meat, cheese and sauce, the filling is rolled into individual lasagna sheets. Then it's rolled up and baked.
What To Serve With Lasagna Roll Ups
Lasagna roll ups pair perfectly with toasted garlic bread and garlic knots. For the adults, a refreshing salad or light soup is a great accompiant.
Ingredients
- Ground beef
- Tomato sauce: or use a jar of your favorite sauce
- Spices: dried oregano, basil, parsley, salt and black pepper
- Sour cream: substitute with ricotta cheese if preferred
- Cheeses: shredded mozzarella cheese and grated parmesan cheese
Instructions
STEP 1: Cook the lasagna noodles according to the package, drain, and set aside on parchment paper to dry. Preheat the oven to 400 degrees Fahrenheit and spread a thin layer of tomato sauce on the bottom of a casserole dish or baking pan.
STEP 2: While the noodles cook, brown the ground beef in a large pan over medium-high heat. Drain the fat and add 2 cups of the tomato sauce, basil, oregano, and parsley. Simmer on low for 5 minutes, then remove from the heat.
STEP 3: Make the filling. In a large mixing bowl, combine the sour cream, 1 ยฝ cups of shredded mozzarella cheese, the grated parmesan cheese, salt and pepper.
STEP 4: Layer each cooked lasagna sheet with a big spoonful of the cheese filling and ground beef mixture. Drizzle on a portion of tomato sauce and roll the lasagna noodle tightly. Place into casserole dish with the seam side down. Repeat until all noodles are rolled.
STEP 5: To the top of the lasagna roll ups, add the remaining sauce and mozzarella cheese. Cover with foil and bake for 20 minutes. Uncover and bake another 10 minutes, or until cheese is golden brown.
Store in an airtight container in the fridge for up to 7 days.
Recipe Tips
- To make smaller lasagna rolls (for smaller kids or lighter portions), cut the noodles in half.
- Freeze each lasagna roll up separately for meal prepping or quick portioned dinners later. Use freezer-safe storage bags and they will keep for about 6 months when frozen.
