Lasagna Roll Ups make a fun dinner to make with your kids. They are an easy and delicious kid-friendly dinner, first course for your holiday menu, a fun appetizer for dinner parties and potlucks, or a meal prep option throughout the week.
Cook the lasagna noodles according to the package, drain, and set aside on parchment paper to dry. Preheat the oven to 400 degrees Fahrenheit and spread a thin layer of tomato sauce on the bottom of a casserole dish or baking pan.
While the noodles cook, brown the ground beef in a large pan over medium-high heat. Drain the fat and add 2 cups of the tomato sauce, basil, oregano, and parsley. Simmer on low for 5 minutes, then remove from the heat.
Make the filling. In a large mixing bowl, combine the sour cream, 1 ½ cups of shredded mozzarella cheese, the grated parmesan cheese, salt and pepper.
Layer each cooked lasagna sheet with a big spoonful of the cheese filling and ground beef mixture. Drizzle on a portion of tomato sauce and roll the lasagna noodle tightly. Place into casserole dish with the seam side down. Repeat until all noodles are rolled.
To the top of the lasagna roll ups, sprinkle on the remaining sauce and mozzarella cheese. Cover with foil and bake for 20 minutes. Uncover and bake another 10 minutes, or until cheese is golden brown.
