Our delicious Blueberry Baked Oatmeal is a dairy-free and refined sugar-free breakfast option for meal prepping, large families, holiday morning and house guests. It's made with wholesome ingredients, like almond milk, pure maple syrup, fresh blueberries, and old fashioned oats.

Blueberry baked oatmeal is the blueberry alternative to our strawberry baked oatmeal breakfast. And it's one of our favorite breakfasts for serving on the weekends, along with 3-ingredient banana pancakes, almond milk pancakes and a simple egg and cheese burrito.

Ingredients

To make blueberry baked oatmeal, you need:

  • Old fashioned oats
  • Fresh blueberries
  • Dairy-free chocolate chips: or regular chocolate chips if you don't mind the dairy.
  • Almond milk: I use unsweetened vanilla, but you can use plain almond milk or oat milk.
  • Flaxseed plus water to make flax eggs
  • Coconut oil
  • Shredded sweetened coconut flakes
  • Pure maple syrup
  • Cinnamon
  • Vanilla extract

How To Make Blueberry Baked Oatmeal

  1. Preheat the oven to 375° Fahrenheit and grease a 2 qt glass baking dish with a little coconut oil. Combine 2 tablespoons ground flaxseed and 6 tablespoons water. Let chill for 15 minutes while preparing the oatmeal.
  2. Reserve half of the sweetened coconut flakes. In a large mixing bowl combine almond milk, maple syrup, blueberries, oats, chocolate chips, cinnamon, vanilla extract and baking powder. Add the flaxseed/water mixture. Mix well.
  3. Pour the oatmeal mixture into the greased baking dish. Top with the reserved coconut flakes and drizzle with 3 tablespoon coconut oil.
  4. Bake for 35-40 minutes, or until the center slightly wiggles. Let cool for 10 minutes before serving.
