To make blueberry baked oatmeal, you need:
- Old fashioned oats
- Fresh blueberries
- Dairy-free chocolate chips: or regular chocolate chips if you don't mind the dairy.
- Almond milk: I use unsweetened vanilla, but you can use plain almond milk or oat milk.
- Flaxseed plus water to make flax eggs
- Coconut oil
- Shredded sweetened coconut flakes
- Pure maple syrup
- Cinnamon
- Vanilla extract
How To Make Blueberry Baked Oatmeal
- Preheat the oven to 375° Fahrenheit and grease a 2 qt glass baking dish with a little coconut oil. Combine 2 tablespoons ground flaxseed and 6 tablespoons water. Let chill for 15 minutes while preparing the oatmeal.
- Reserve half of the sweetened coconut flakes. In a large mixing bowl combine almond milk, maple syrup, blueberries, oats, chocolate chips, cinnamon, vanilla extract and baking powder. Add the flaxseed/water mixture. Mix well.
- Pour the oatmeal mixture into the greased baking dish. Top with the reserved coconut flakes and drizzle with 3 tablespoon coconut oil.
- Bake for 35-40 minutes, or until the center slightly wiggles. Let cool for 10 minutes before serving.
