This Blueberry Baked Oatmealrecipe sweetened with coconut, chocolate and maple syrup.This delicious, wholesome family-friendly breakfast comes together in 1 bowl and is baked in the oven, making it an easy breakfast for big families, house guests, or lazy Sunday mornings.
Preheat the oven to 375° Fahrenheit and grease a 2 quart glass baking dish with a little coconut oil. Combine 2 tablespoons ground flaxseed and 6 tablespoons water. Let chill for 15 minutes while preparing the oatmeal.
Reserve half of the sweetened coconut flakes. In a large mixing bowl combine remaining coconut flakes, almond milk, pure maple syrup, old fashioned oats, fresh blueberries, chocolate chips, ground cinnamon, vanilla extract and baking powder. Add the flaxseed/water mixture. Mix well.
Pour the oatmeal mixture into the greased baking dish. Top with the reserved coconut flakes and drizzle with 3 tablespoon coconut oil.
Bake for 35-40 minutes, or until the center slightly wiggles. Let cool for 10 minutes before serving.

To store, cover and keep in the fridge for up to 5 days.
