These Soccer Cupcakes are a fun way to end the soccer season, celebrate soccer watching parties or just for kids who love soccer! They're easy to make with a box of vanilla cake mix. We make a quick and simple butter and cream cheese chocolate frosting (or buttercream Nutella frosting), topped with green jimmies and a ring pop soccer ball. The cupcakes end up looking like a soccer ball laying in the grass...and of course the kids love every bit of it!
Ingredients
Cupcakes and Frosting
- 1 box white cake mix, plus eggs and oil as indicated on package
- Butter
- Cream cheese
- Vanilla extract (or chocolate extract)
- Unsweetened cocoa powder
- Confectioner's sugar (powdered sugar)
Decorations
- Green jimmies (sprinkles)
- Soccer ball ring pops
How To Make Soccer Cupcakes
Homemade soccer cupcakes are super easy to make.
Baking
- Preheat the oven to the temperature indicated on the box of cupcake mix (usually 350ยฐ Fahrenheit). Line the muffin tin with the cupcake liners.
- Make the cupcake batter as indicated on the package and fill each liner โ full. Bake for the time indicated on the box, usually 18-20 minutes. Remove cupcakes from the oven when done and place on your decorating workspace. Let the cupcakes cool for at least 1 hour before frosting.
Frosting
- When the cupcakes have cooled make the chocolate frosting. Combine the softened butter, cream cheese and vanilla extract in a large mixing bowl. Using the electric hand mixer, beat on medium speed until smooth, about 1 minute. Add unsweetened cocoa powder and beat on medium speed until smooth. Add the powdered sugar 2 cups at a time and continue to beat on low speed until smooth.
- Choose your piping tip and secure it to the piping bag. Fill the piping bag with frosting. Twist the top where the frosting ends and hold securely while squeezing the frosting in a circular fashion onto each cupcake.
Decorating
- Sprinkle each frosted cupcake with green jimmies. Place a soccer ball ring pop on the top of the frosting, pressing down to adhere slightly.
- Transfer decorated cupcakes to the fridge to chill and set the frosting. Serve within a few hours or within 2 days for the best results.
Tips from the Chef
- Let the cupcakes cool completely before frosting. If the cupcakes are still warm, the icing will melt and slide down the sides of the cupcake. To cool them quickly, put in the fridge for 10 minutes and then decorate.
- Use a chocolate cake mix to make chocolate cupcakes instead.
How To Store Cupcakes
Store cupcakes in disposable cupcake holders. If you make cupcakes a lot, this cupcake carrier is a great way to store and transport them. They should be kept in the fridge for 2-3 days.
