Our Cherry Chocolate Brownies recipe is a no-bake dessert delight. They are low sugar and flourless so you can enjoy the yumminess of fudgy brownies without the sugary, processed ingredients. In fact, we love these more than we do traditional brownies (yes, they are that good!).

Ingredients
- 1 cup pitted medjool dates
- 1 cup dried tart cherries, plus more for topping. I use sweetened dried cherries but you can use unsweetened.
- ½ cup 90% dark chocolate bar, broken into pieces
- ½ cup raw walnuts
- ⅓ cup unsweetened cocoa powder or raw organic cacao powder
- 2 tablespoon ground flaxseed
- ¼ teaspoon sea salt
Tips from the Chef
- Do not use regular table salt. Only sea salt works in this recipe.
- For the best flavor and wholesomeness, do not use sweetened baking cocoa.
- I buy medjool dates with the pits because they're less expensive. It's easy to squeeze out the pits if you don't mind taking a few extra minutes to do so.
- My favorite chocolate bar for making date brownies is Lindt Excellence 90% cocoa bar.
How To Make Date Brownies
- In a high speed blender or food processor, process the pitted dates, broken dark chocolate bar pieces, walnuts, cocoa powder, flaxseed and sea salt until combined and sticking together, about 1 minute. Add cherries and reprocess for about 30 more seconds. *The mixture will still feel and look crumbly, but will stick together when pressed.
- Roll the date mixture out onto a non-stick surface, such as a baking sheet, wax paper or parchment paper. Using your hands or a rolling pin, flatten until it's about ½ inch thick. Preferably, press the brownies into a 6x9 or 8x8 baking sheet.*The mixture will still appear crumbly but will stick together when pressed and when chilled, will be smooth and brownie-like.
- Sprinkle with additional small chocolate pieces, coconut flakes and cherries if desired, pressing them into the brownies so they stick. Chill for at least 20 minutes, then slice and serve.

Variations
- Make brownie balls instead of bites by rolling the finished brownie mixture into balls about 1 inch in diameter.
- Add in white chocolate or replace the dark chocolate all together with white chocolate if you have white chocolate lovers.
- Make them vegan by ensuring your chocolate bar is made without any animal products. Usually 90% cacao bars are vegan but it's always best to check the ingredients.
