Our Cherry Chocolate Brownies recipe is a no-bake dessert delight. They are low sugar and flourless so you can enjoy the yumminess of fudgy brownies without the sugary, processed ingredients. In fact, we love these more than we do traditional brownies (yes, they are that good!).
In a high speed blender or food processor, process the pitted dates, broken dark chocolate bar pieces, walnuts, cocoa powder, flaxseed and sea salt until combined and sticking together, about 1 minute. Add cherries and reprocess for about 30 more seconds. *The mixture will still feel and look crumbly, but will stick together when pressed.
Roll the date mixture out onto a non-stick surface, such as a baking sheet, wax paper or parchment paper. Using your hands or a rolling pin, flatten until it's about ½ inch thick. Preferably, press the brownies into a 6x9 or 8x8 baking sheet.*The mixture will still appear crumbly but will stick together when pressed and when chilled, will be smooth and brownie-like.
Sprinkle with additional small chocolate pieces, coconut flakes and cherries if desired, pressing them into the brownies so they stick. Chill for at least 20 minutes, then slice and serve.
