Our delicious Cheese Lasagna is made with cottage cheese, creamy mozzarella and tangy white cheddar cheese. Using your favorite brand of prepared marina sauce (or a simple homemade sauce) and oven-ready lasagna noodles make this recipe an easy and quick one not just for busy nights, but for family dinners on the weekends and special gatherings too.

With picky kids who don't love eating a lot of meat because of its texture, we make this meatless lasagna as an alternative. Along with our vegetarian stuffed peppers and meatless baked ziti, this is a comforting and hearty dinner nevertheless.

Ingredients

You'll need a 9x13 inch baking dish, mixing bowl, spoon and aluminum foil, plus the following ingredients:

  • 2 cups small curd cottage cheese
  • 2 cups shredded white sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup Italian bread crumbs
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 4 cups marinara sauce
  • 13 oven ready lasagna noodles
  • Fresh basil or parsley for serving

Instructions

  1. Preheat the oven to 350℉.
  2. In a large bowl, mix together the cottage cheese, white cheddar cheese, breadcrumbs, garlic powder and onion powder.
  3. Spread 1 cup of sauce on the bottom of the 9x13 inch baking dish. Lay 3 noodles longways on top of the sauce. Spread ½ of the cheese mixture over the noodles. Spread 1 cup of marinara sauce on top of the cheese mixture.
  4. Add 5 more noodles on top of the first layer. Spread the remaining cheese mixture over the noodles. Spread 1 cup of marinara sauce on top.
  5. Add the last layer of 5 noodles and spread 1 more cup of sauce on top, ensuring the noodles are completely covered.
  6. Cover with aluminum foil and bake for 45 minutes.
  7. Remove from the oven and uncover. Sprinkle the shredded mozzarella cheese on top and bake uncovered for another 15 minutes, or until all of the cheese is melted and begins to turn golden brown.
  8. Top with chopped fresh parsley or basil and let cool for 15 minutes before serving.

How To Store

Store leftovers in an airtight container in the fridge for 3-4 days, or tightly cover the baking dish with aluminum foil or plastic wrap. Reheat in the oven or microwave. Cheese lasagna can be frozen in freezer safe storage containers for up to 6 months. Thaw in the fridge overnight before reheating.

Can I Use Ricotta Cheese Instead Of Cottage Cheese?

Yes, you can use the same amount of whole milk ricotta cheese as a substitution for the cottage cheese.

Can I Use Cooked Lasagna Noodles?

If you prefer to use traditional lasagna noodles instead of oven ready noodles, they should be pre-boiled according to the package instructions before making the lasagna.

Can I Bake It Without It Being Covered?

No, the lasagna should be baked for at least 45 minutes covered with aluminum foil to prevent it from drying out and the top from burning.
