No-Bake Oreo Cheesecake Bars are the ultimate easy dessert - creamy, rich and loaded with crunchy cookie pieces in every bite. They come together quickly with simple ingredients, making them great for birthday parties, holidays, potlucks and more.
Line an 8x8 inch baking dish with parchment paper.
Process half of the Oreos in a food processor until they turn into crumbs. Add the unsalted room temperature butter and process again, until the mixture starts to clump. Press the Oreo crust into the parchment-lined baking dish and freeze while making the filling.
In a large mixing bowl, beat the softened cream cheese, powdered sugar, vanilla extract and heavy cream on medium speed using a hand mixer. Mix until there are no lumps, then fold in the cool whip.
Chop the remaining Oreo cookies. Add half of the chopped Oreos to the cream cheese filling and mix in using a spoon. Pour the filling over the chilled crust. Sprinkle the remaining chopped Oreos on top of the filling.
Set in freezer for 2 hours, then slice and serve.
