Broccoli Fritters

These easy Broccoli Fritters are made with 4 simple ingredients and make a great kid-friendly lunch or snack. They are ready to eat in 15 minutes and can be served as a vegetarian pattie, a baby veggie burger, or a light lunch or healthy snack. Soft on the inside and crispy on the outside, broccoli fritters are a great way to sneak your kids a dose of vegetables!

Ingredients
  

  • 1 ½ cups cooked broccoli, see notes for using uncooked broccoli
  • 1 ½ cups shredded cheddar cheese
  • cup seasoned breadcrumbs, or panko
  • 1 large egg
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoon extra virgin olive oil

Instructions
 

  • Place the cooked broccoli florets in a food processor and process until pieces are very small. Alternatively, use a knife to chop broccoli into tiny pieces.
  • In a large mixing bowl, add the chopped broccoli, cheddar cheese, breadcrumbs, egg, salt and black pepper. Stir well.
  • Roll the mixture into small balls, about 2-3 inches. Press them between your palms to flatten into patties.
  • In a cast iron skillet or non-stick frying pan, heat olive oil over medium heat. Place the fritters on the skillet and cook for 2-3 minutes on each side or until golden brown.
  • Remove from pan and serve warm or at room temperature.

Notes

Using uncooked broccoli: You can use uncooked fresh or frozen broccoli will need to steam it or boil it first. Once done, follow the instructions as written.
Storing: Broccoli fritters keep in the fridge for up to 7 days. They can be frozen for up to 6 months when stored in freezer-safe bags or containers.
