Dye the shredded coconut green using food coloring. Place the coconut in a large glass mixing bowl and add food coloring about 1 teaspoon at a time. Mix with a wooden spoon until the coconut is completely green. Add more food coloring as you see fit to make it as dark as you'd like.
Fill each 4-ounce cup with chocolate pudding, leaving about ¼ inch for the coconut grass. Add a layer of green coconut shreds to the top of the pudding.
Place one bunny peep into the coconut, pressing it down into the pudding so that it stands straight. Scatter jelly beans throughout the coconut and sprinkle some more coconut on top so the eggs are slightly hidden.
